LEAD BAKER
Leads the other bakers in the production of breads and pastries,
and daily maintenance of the bakeshop facility and equipment.

Ideal candidates will have kitchen/bakeshop experience, and demonstrate initiative and tenacity.

Department Stations:
Hearth Breads: sourdough, bagels, brioche
Pastry: muffins, cookies, biscuits, cakes
Viennoiserie: croissants & cold case items

Summary:

The Lead Baker works directly under the General Manager.
Leads the other bakers in the production of breads and pastries, and daily maintenance of the bakeshop facility and equipment.
You’ll be responsible for leading and giving directions to other bakers according to the production needs of the department. You are responsible for overseeing daily maintenance of the bakery facility and equipment, and fostering effective channels of communication between the other departments.

Position Type: Full time (40 hours minimum)
Compensation: $18.5/hour + tips (approx $23/hour after tips) Eligible for Salary

  • Prior professional cooking experience.

  • Prior knowledge of knife cuts, measuring, grilling, etc.

  • Excellent communication and organizational skills.

  • Mental clarity and physical stability within a fast-paced, high-volume environment.

Core Responsibilities of this Role:

  • Use Honeycomb’s recipe book to scale ingredients and follow the proper techniques while making breads and pastries. Assist other bakers in applying the proper techniques as needed. As techniques and recipes evolve, work with Benjamin to update the recipe book.

  • Contribute creatively to the bakery’s seasonal offerings, working across departments to bring new ideas to life.

  • Approach each customer request and challenge with a problem-solving attitude.

  • Meaningfully understand the needs of our guests, and provide excellent care accordingly.

  • Make prep lists and give directions for other bakers to follow.

  • Track ingredient and product use and contribute to the food order as appropriate. Communicate across departments to ensure bread usage is meaningfully understood.

  • Maintain a clean and organized storage area, bakery equipment, and facility

  • Feed and maintain healthy sourdough starter

  • Lift at least 50 pounds and work on your feet in a busy kitchen.

  • Write and communicate with teammates clearly and effectively.

  • Use math to manipulate batch sizes and double check ratios.

  • Clean your station and the bakeshop throughout the day and at the end of each shift.

  • Use your judgement and make decisions based on your best job knowledge, as well as according to Honeycomb’s values of generosity, humility, grace, and honesty.
