The following Staff Handbook makes known the conduct and values by which we work in order to achieve the above goals.

1.5 Facility Description
Honeycomb is an artisan bakery-cafe that specializes in naturally-fermented sourdough breads. Our bakery is located in beautiful downtown Winter Haven, Florida. Guests can enjoy freshly baked breads, pastry, and beverages to-go, or in the shop and garden seating areas. The facility is wheelchair friendly with ground-floor seating and ADA accessible restrooms.
Our 1600 sqft space allows our artisans to operate large bakery production equipment with a full restaurant kitchen, walk-in fridge, and espresso bar. This facility produces enough product to serve Winter Haven, the farmer’s market, and many additional local restaurants and cafes via Honeycomb’s wholesale network.
1.6 Packaging Description
Products made at Honeycomb for distribution are individually packaged in air-tight plastic wrap or in sealed containers. Every individual item has the appropriate label with date of production. Due to the small-batch nature of our facility, the name and production date will also serve as the batch code in the case of recalls.
Products prepared at the retail bakery will be plated for immediate consumption in the appropriate take-out container or wrapped in wax paper and handed to the guest in the appropriate-sized paper bag for immediate consumption.
1.7 Storage
Store and transport food under conditions that will protect against allergen cross-contact and against biological, chemical, and physical contamination of food, as well as against deterioration of the food and the storage container. Loaves of bread should be individually wrapped, and small loaves such as bagels and baguettes should be bundled and wrapped in packs. Label each unit and set aside for delivery or freeze.
Raw ingredients should be segregated according to their needs. Dry goods such as flour, seeds, and nuts should be stored in clean bulk containers with labels. In the fridge, eggs should always be stored at the bottom, followed by dairy, then produce on top. Mise en place should always be kept separate in properly sealed containers with labels and production dates. Any mise en place that is kept beyond 7 days of production will be thrown away. At the end of your shift, make sure that everything is either in a sealed container, or individual wrapping with a label and date.
1.8 Deliveries
Prepare product for delivery on a clean sheet pan with a clean layer of parchment paper. If items getting delivered do not have individual packaging, such as a tray full of muffins, wrap the entire sheet pan to protect it during travel. Trays should never be stacked during transport. When running deliveries, your car should be clean and free of clutter. If your car is not in good maintenance with valid and updated documents, you will be disallowed to use your car for business-related trips.
When running a delivery, make sure the location services are activated on your Square Team app to track your miles for reimbursement.
