4.1 Injuries

Regardless of the nature or severity, all injuries incurred while on the job must be reported to Benjamin at once during the same shift in which the injury occurs. The bakery carries insurance against accidental injuries. An injured employee who is sent home from work by their doctor will be paid for the remainder of their workday. Any employee who fails to report an injury during the shift in which the injury was incurred will be subject to disciplinary action.

If an injury occurs, begin applying first aid and direct the nearest person to call 911 if appropriate. Stabilize the situation before reporting. If the injury requires a doctor visit, the acting team leader or Benjamin will accompany them to the doctor and make sure they get the needed medical care.

If an injury occurs at work and it is not reported properly according to the Worker’s Compensation Act of the State of Florida, legal repercussions can be incurred. Please make sure any workplace injuries are handles safely and properly.

4.2 Cleanliness

All employees must conform to hygienic practices while on duty to protect against allergen cross-contact and against contamination of food. Methods for cleanliness include:

  • Wearing your uniform according to the Honeycomb uniform guide

  • Maintain adequate personal cleanliness

  • Washing hands thoroughly (and sanitizing when necessary) in a hand-washing facility before starting work, after any absence from the work station, and at any other time when the hands may have become soiled or contaminated.

  • Removing unsecured jewelry or other objects that might fall into food

  • Maintaining gloves in an intact, clean, and sanitary condition if used in food handling

  • Wearing your hat and keeping hair restrained as needed

  • Storing personal belongings in the designated area separate from food handling stations.

  • Confining eating food, chewing gum, drinking beverages to areas away from where food may be exposed. No open food or drink containers may be at work stations at any time.

  • Take every necessary precaution to protect against allergen cross-contact and contamination of food, food-contact surfaces, or food-packaging materials.

4.3 Dangerous Weather

In the case of serious or dangerous weather, Benjamin will close the bakery until the danger has passed. Look for all-staff notifications to determine closure dates, or contact Benjamin directly if you are in doubt. If the bakery is open for business, you are expected to show up for your shifts.

If there is a power outage during your shift, calmly and carefully acquire light using a flashlight or phone light. Make sure gas appliances are turned off and all fridges and freezers are shut tight. Do not open fridges or freezers during a power outage. Call Benjamin as soon as is practical for further instructions.

4.4 Vaccinations

We encourage you to be up to date with all vaccinations. If your vaccination day overlaps with a work day, it is your responsibility to have your shift covered. If you need an additional day off due to vaccine fatigue or other side-effect, your shift will be covered and you are awarded a paid sick day.

4.5 Building Security

Honeycomb and its staff will make every effort to provide a safe and secure environment for its employees and guests. Passcodes for wifi, computer equipment, and alarm systems, are absolutely NOT to be given out to any non-staff. The private networks regulate our utilities and Point of Sale systems, and must remain secure.

Employees gain access to shop doors using their electronic key fobs. These fobs must be signed out from six/ten and are specifically coded for each employee. They are non-transferrable. If you lose your key fob, a replacement will be provided with a garnishment of $50 from your next paycheck.

4.6 Closing the Shop

If you are the last person to leave the building, you are responsible for the following tasks to have been completed:

  • Trash has been taken out from all containers and fresh bags are placed in all bins

  • Music and lights are turned off.

  • Floors are swept and mopped.

  • Equipment has been turned off.

  • Fridge and freezer doors are closed.

  • Food is covered and put away properly.

  • All customers have left and the bathroom doors are propped open.

  • Chairs, stools, and furniture is reset to their proper positions

  • Air conditioner is set to 78*F

  • Security alarm is turned on and armed, and doors are locked behind you.

4.7 Fire Safety and Emergency Exits

Fire Extinguishers are located at the end of the bar hanging at eye level. There is a second fire extinguisher on the other end of the bar next to the prep space hand sink Exit doors are located on the east wall of the bakeshop, and west wall of the dish area, and the front entrance facing 6th Street.

If there is a fire or other type of emergency, call the appropriate emergency agencies by calling 911 on any available phone. When appropriate, calmly dismiss customers in an orderly manner using the front 6th street exit. Enforce the no-smoking rule throughout the premises

4.8 Staff Health

Any person who has or appears to have any abnormal source of microbial contamination that reasonably could contaminate food, food-contact surfaces, or food-packaging materials MUST be excluded from any operations which could result in such contamination until the condition is corrected (or wounds are adequately covered). Personnel must report such health conditions to their Team Leaders.

You MUST report any symptoms to your Team Leader as described in the chart below. If you are diagnosed with the following food borne illnesses, your Team Leader must report the instance to the proper regulatory agency in case of outbreak.

4.9 Power Outages

Front of House Protocol

  1. Calmly and clearly communicate to guests that service is being temporarily suspended due to the power outage.

  2. Retrieve the flashlights and lamps from below the brewer cabinet.

  3. Guests who are finishing food and drinks can be left to enjoy their meals before leaving.

  4. Transactions that were in-process during the outage are suspended and cannot be accepted.

  5. If there are guests waiting for orders that were paid for but not yet fulfilled when the outage occurred, take their contact information and notify them that a refund will be processed automatically once electricity is restored. If Benjamin is present, he will process refunds using his phone.

  6. Call the utility company and try to determine if they can provide an estimate of when service will be restored.

Back of House Protocol

  1. Dispose of any food that is in the process of being cooked but has not reached the target temperature.

  2. Food that is being hot-held should be quickly chilled using an ice bath and returned to the cooler.

  3. Consolidate the deli case and ice bathed food onto a speed rack and and return to the cooler in one go.

  4. Keep all fridge and freezer units shut unless absolutely necessary.

  5. Turn off all gas equipment and heating elements and open back door for a short time if possible to create ventilation

  6. Make a note of when power goes out for use in determining what stock needs to be disposed of.

When Power Returns:

  1. Cold food that loses temperature control and enters the temperature danger zone (41*F) can be saved after 4 hours, unless it reaches 70*F.

  2. Do not open any fridge or freezer units until they have returned to their set temperature.

  3. Check that frozen food does not contain signs of freezer burn damage from thawing.

  4. Check and reset the breaker box and any wall outlets that may have been flipped during the outage.

  5. Service can resume only after all electrical units have been reset, cold units have returned to their target temperature, hot water has been restored and all potentially hazardous food has been identified and disposed of.

Long Term Outages (2+ days)

  1. Take a full inventory of products. Spoiled inventory will be reported to our insurance agency.

  2. Benjamin will bring a generator to the shop to power the freezers.

  3. Coordinate with Sysco to arrange for a reefer truck to provide refrigeration to Adlers, Honeycomb, and Smokin’ Ox.

  4. If the city or county issues a close order due to emergency conditions, we must recieve clearance from that governing body before reopening.

4.10 Storm Preparation Checklist

  • Medical kit is stocked

  • Filtered Water Stored in cambros—at least 10 gallons

  • Emergency kit stocked to include, batteries, blankets, tarps, and sandbags

  • Check flashlights and lamps

  • Business records and documents are closed in the firebox, which Benjamin will take home

  • Check hardware and toolkit are fully stocked

  • Bring in all outdoor plants and furniture.

  • Sandbag doors to prevent flooding

  • Get all equipment and ingredients off the floors in case of flooding, including flour sacks.
